There is a great website called PS It’s Healthy (www.psitshealthy.com) that has some recipes for us candida sufferers. Some need slight modifications. Some are great for an inspiration to create your own recipe.
This one is especially healthy and filling:
Zucchini Broccoli Patties
1 large zucchini (grated with skin on)
1 medium broccoli floret (finely chopped)
1/2 red onion (finely minced)
3 garlic cloves (finely-minced)
1/2 cup fresh herb of your choice (cilantro, mint, dill etc.)
1 teaspoons chilli powder
salt and pepper (to taste)
1/2 cup millet flour
1 egg (beaten)
Olive oil to shallow fry
Place the grated zucchini on kitchen towels and press down with another towel to squeeze out the excess water.
Add the broccoli and zucchini to a large bowl and add the garlic, herb, chilli, salt and pepper. ((I opted to shred & mince my veggies in a food processor.))
Add the millet powder and mix well until all the broccoli and zucchini pieces are well coated.
Finally, add in the egg and mix well. A thick batter or paste should come together. Feel free to add a little water if this isn’t the case.
Heat the oil in a skillet or frying pan over medium heat. Take some oil and rub it over your hands. Place a scoop of the batter on your hands and gentle shape it into a patty.
Fry the patties in the pan until golden brown on each side.

verrry yummy, i brought some to a bbq.
The greek yogurt or tzatziki dip is a must with these!!!
oh and i tried rutabaga (swede in Australia) instead of broccoli,really yummy
Also i stained the extra liquid from the zucchini and rutabaga in a cheese cloth and squeezed it out, really efficient.November 21, 2013 at 11:20 am #112776

I tried these and came out really nice. I’m a vegan so i substituted the egg with 1 table spoon of ground flax seed mixed with 3 TBS water. I used buckwheat flour instead of millet flour and i baked them in the oven. they stayed put together ! delicious 🙂 thank you
