    Has anyone had experience with water/sugar kefir? I really don’t get on with the casein in milk, and was thinking of trying the water kefir. With regards adding sugar, it strikes me you could easily end up ingesting sugar that hasn’t been fermented. Has anyone managed to get round this?

    I ferment mine for 24 hours, and then leave it in the fridge for 24 hours before drinking. This is supposed to reduce the sugar further. However, it always has a very slight sweet taste. You could try leaving it in the fridge for 2-3 days before drinking.

    One thing to try if you don’t want water kefir is fermented cabbage juice. This is apparently a probiotic, and is made with no sugar.

    Personally I really don’t enjoy the taste of Water Kefir. It smells and tastes almost alcoholic but not in a good way. I now make Coconut Water Kefir using milk kefir grains after advice from Benc in this forum
