Been trying this diet for ages now but I am fussy eater so it is difficult for me. I was wondering if it is possible to eat tomatoes to enable me to make a homemade sauce?

What is your diet currently like? How long have you been on the diet? Have your symptoms improved?
Tomatoes are a fruit and should be eaten during stage 2 when your leaky gut has started to heal.

I am currently following the diet and am in stage 2 but finding it very dificult. My symptoms have not yet improved and am just trying to find things that I can eat

Also, am I able to eat coconut flesh aswell as drink the milk?

Stage 2 is meant for later in your treatment, stage 1 is meant for earlier in your treatment. I would look at your picky food problem as one of the reasons you are here in the first place and you’ve gotta change your mental outlook on it. I am also a picky eater and my picky eater problems created nothing but troubles for my recovery.
The reason you aren’t recovering as well as you’d like is because your diet isn’t strict enough. Stage 2 is meant for later in your treatment when you are mostly symptom free. I started stage 2 after 9 months on the diet when my leaky gut healed.
You need to eat lots of veggies on the diet. Low servings of meat, and tons of prebiotics/probiotics. No rice, no molds, no fruits, etc.
What supplements are you taking as well?

I will be buying Yeo Valley yoghurts tomorrow and are taking some other capsules (but I can’t remember what they are)

Coconut milk should be OK; it contains about 1g of sugar per container. Raw coconut is not ok because it is a fruit and contains about 25g of sugar per coconut. I am borderline allergic to coconut milk and it doesn’t make me feel very good. I personally sometimes get bad stools afterwards and it makes me feel sluggish.
