It comes out so sweet that I’m worried the roasting process is bringing out the natural sugars and feeding the candida. Any idea?

The sugar content of a rutabaga stays the same no matter how you prepare it. Provided you don’t add any sugar to it. In fact Rutabaga is an anti fungal, so enjoy it.
