Oatmeal Bars

    I’ve been messing around in the kitchen for a satisfying oatmeal snack recipe. I’ve seen some good ones on here but wanted more “sweet” flavor and it has a hint of butter taste:) Here’s what I did and it’s great! My hubby loves it too and he’s not on the diet. He did suggest more sugar but I don’t use any of the syrups or nectars at this stage of my diet and it’s sweet to me after craving sweets lol. High protein, high fiber.

    2 tsp Vanilla
    2 eggs
    1/3 C Olive Oil
    2/3 C homemade or unsweetened applesauce
    1/2 C Truvia ( I used packets)
    2 tsp cinnamon
    1 C Almond Milk
    1/2 tsp salt
    1/2 C unsweetened coconut
    2 tsp baking soda
    1/2 C flaxseed
    2/3 C chopped walnuts
    2 C Old Fashioned Oats

    Mix everything together well and smooth out in a 9 x 13 pan. Bake @ 325 for 30-35 minutes. Cool and cut into bars. Take with for a great snack or meal on the go.

    I wouldn’t consume oats on the diet because they are high in starch and contain gluten. Starch converts to sugar. This is why carrots, corn, and potatoes are not on the diet.
