    I am going to try to change this to be good for the diet. I wanted to post it if anyone else might have some great ideas, suggestions, or would like to try it before I will.

    Original recipe From Gluten Free Recipe
    1 1/3 cups sweetened flaked coconut (replace with unsweetened flaked coconut)
    2/3 cup sugar (Replace with xlitol and maybe add more because the coconut is unsweetened)
    2 egg whites
    1/2 teaspoon vanilla (alchol free vanilla extract)
    1/4 teaspoon almond extract (omit or use Sweet leaf hazelnut flavor)
    Pinch salt
    4 ounces sliced almonds, crushed (omit or make sure they have been sprouted and dehydrated)
    18 whole almonds (omit or make sure they have been sprouted and dehydrated)
    Chocolate Ganache (omit,only use to coat the bottom of the macaroons)

    1) Combine coconut, sugar, eggs whites, vanilla, almond extract and salt in medium bowl; mix well. Fold in sliced almonds. Cover and refrigerate at least 1 hour or over night.
    2) Preheat oven to 350 F. Line baking sheet with parchment paper.
    3) shape dough into tablesponful-size balls. Place 1 inch apart on prepared baking sheet. Press 1 whole almond on top of each cookie.
    4) Bake 15 minutes or until light brown. Cool on baking sheet for 5 minutes. Remove from baking sheet and cool completely.
    5) meanwhile, prepare Chocolate Ganache.
    6) Dip bottom of each cookie into ganache. Refrigerate until ganche is set. Store covered in fridge.

    Discalmer: Almonds are not on the strict diet list. It is something that needs to be tested. The best way to eat any nuts is to make sure they have been sprouted and dehydrated to help with mold. Go Raw brand makes seeds that have been sprouted and dehydrated. They say “Content has been dried under 105 F and all seeds have been sprouted, releasing enzymes which make them healthier and easier to digest. Sprouted seeds are among the most nutritionally dense foods on the plant.”
