Hi! I just wanted to put my two cents in on the topic of tie guan yin. I currently live and work in Chengdu China and tie guan yin happens to be very popular here. I started the candida diet a couple of months ago and tie guan yin (in moderation) helped me survive some horrible die off reactions the first week. I’m with you in believing that if you drink it in moderation, the benefits outweigh the drawbacks. I’ve also noticed my caffeine cravings have abated recently and I think as your gut heals you can slowly cut out tea altogether and let your adrenals rest & heal.
One thing that I noticed: people here in China take their time drinking tea, are religious about steeping time/method and drink in tiny, ity bity cups. For myself, before I came here, I was accustomed to using tea bags and comparably enormous mugs. How you drink your tea, I think, makes a big difference.
