Ginger isn’t really an antifungal and isn’t likely what caused your problem. Kimchi is a cultured food, like sauerkraut or kefir. As such, it was probably the bacteria in it which gave you the die off. Or it could something else in the kimchi. If there was jalepenos or something of that nature, that could have given you die-off as well.
