I think that able’s recipe doesn’t work well for doubling; I also think he may have changed the ratio of the recipe from when I originally saw it a year ago.
This is what I used to do for his coconut bread recipe:
-1 cup olive oil
-1.5 tsp of baking powder or baking soda (they both work, but the bread comes out differently depending on which one you use)
-1.5 tsp of sea salt
-3 cups of coconut flour (2.5 cups might be better)
The stevia, lemon, and cinnamon shouldn’t affect the texture.
Bake at 350 degrees for about an hour.
I personally could not handle the coconut bread more than a few months and started to experiment with other recipes. Thats how I came up with my teff bread recipe! Check it out when you are ready!
