Do you have a slow cooker? I buy a whole chicken, basically roast in the slow cooker (I sit it on a bed of onions and sprinkle some spices on top) and we eat half of it for dinner one night. There’s usually a small amount of juice which i reserve as stock in the bottom of the pot. Then I strip the meat off to use for another meal, put the bones back in the pot with an onion, a carrot (you’re going to throw the carrot away, so you just get the nutrients, not the starch from it), more herbs and spices, a bit of apple cider vinegar and enough water to cover it all – sometimes a dash of salt too. I leave it on low overnight, and the next morning I have stock. Three meals in one!
