If you react to flours that means you have leaky gut; it doesn’t mean that you are feeding candida. Its an immune system response.
One thing you can do if you wanted is to eat these foods/flours throughout your treatment and just tough out the symptoms. Eventually “you will work it in” and won’t be nearly as allergic to it as your gut heals. Prebiotic foods would be a great example of something you should consider toughing out.
