Coconut bread! It’s delicious and will help up your calories. Eat as much as you can. Eat avocados, coconut oil, etc. Count calories and make sure you are getting enough. There is a good website (myfitnesspal.com) that also has an app for iPhone and android (I believe) that can help with this. Don’t shy away from fat and protein!
well i made my first batch of coconut bread…can i get a big yucky, yuck,yuck…I thought going gluten free was bad, but that bread was so yucky…very bland…what recipe di u use, as you seem to like it…
You just have to reframe your idea of “bread”, LOL. You get used to it pretty fast. I liked it even at the first batch (just used the basic recipe, no baking powder though), but I’ve been gluten free for a couple of years and had low expectations for texture. I also like to put things on it, like guacamole.
