The first foods that I added after completing the first stage of the diet was alternating ½ of a Granny Smith apple a day with pinto beans. I chose each of these for very specific reasons. The green apples are a wonderful addition to the line of prebiotics that I was trying to obtain every day.
And as far as the beans were concerned, I needed to increase the amount of protein I was obtaining during the diet and knew that this was the best way if I still wanted to avoid red meat and pork for a while during stage two. .
The sugar content of pinto beans is about one gram per serving, and I believe that it’s just as important to keep the sugar intake as low as possible during the second stage as it is during the first. I base this on the fact that far too many people revert back to the full Candida infestation during the second stage than at any other time of the infestation because they add the wrong foods too quickly; namely, sugar. And the beans are high in soluble fiber which adds another prebiotic to your diet.
Of course, if any time you experience a slight Candida-type reaction, I would eliminate it immediately and forget about adding foods for another few weeks.
