I have not started making kefir yet. My naturopath told me that I am way overloaded with mucous and congestion so he doesn’t want me to do any dairy at all. Not even yogurt. But he did tell me that I can do goat milk yogurt in moderation for the probiotics. He said that the goat milk is exponentially easier on the system than cow milk.
I do actually have an ice cream maker, and have been thinking of trying to make some coconut milk ice cream. If I add some ground vanilla bean, alcohol free vanilla extract, and some xylitol (I like it better than stevia), it may actually be edible. Maybe add a bit of goat milk yogurt or kefir to thicken it. I will definitely report my results!
