I love butter, and I always thought ghee would be gross, maybe because of the name. (“Ghee” just doesn’t sound appetizing.) But now I can’t believe I went so long without the stuff! I actually find it a bit sweeter than butter, more like a European or unsalted butter than regular butter. The main difference is in the presentation. Because the cream has been removed, it is not as spreadable as butter. But it is delicious! Purity Farms (other brands are available) is a great tasting one at a pretty good price.
I’m not back to baking yet, so I don’t know for sure, but because it is solid at room temp, I have to think it would be great in any baking recipe that calls for cold butter, like biscuits, shortbread, or crusts.
