Tomato mozzarella basil salad

This is a really simple salad that’s perfect for summer evenings or as a quick and easy side dish for dinner.

The combination of tomatoes and cheese mean that this is a recipe better suited for later on in your Candida diet (at least not the initial stages). Or you can use it as a side dish and pair it with some healthy protein to balance out the meal.

Why do we use goat’s milk mozzarella for this recipe? Goat’s milk is easy to digest, has lower lactose levels than regular cheese, and contains caprylic acid (an antifungal which can help to beat your Candida).

Ingredients
  • 10 cherry tomatoes
  • 10 pieces goat mozzarella
  • 1 Tbsp. olive oil
  • Fresh basil leaves
Instructions
  1. Halve the cherry tomatoes and mix with the mozzarella and basil leaves.
  2. Drizzle with olive oil and season with salt and pepper.

    At what stage in the diet can I introduce goat cheese? Thanks!

      Goat cheese is on the maybe list. You can introduce it in stage 2 (after the detox), but I would recommend sticking to small amounts. Goat cheese is much easier to digest than regular cheese, it has less lactose, and it has some antifungal properties too.

    Thank god, i was wondering the same thing. I think ill try to make something with goat cheese for the superbowl. Maybe some low carb mini pizzas (with home made sauce) Other than that its baked chicken wings and your poblano pepper chili (which is pretty dang good)
