Made this the other night with homemade almond milk and homemade vanilla. I used 2 tbsp of xylitol in place of the tbsp of maple syrup. It was yummy and am making it again, but this time I’m cutting back to 1 tbsp xylitol and 3/4 tsp vanilla. Also, I found I needed to stir it well for a good 15 minutes before putting it into the fridge, otherwise it became quite stratified as it cooled and some parts were much thicker than others. Doesn’t require overnight to set up; a few hours seems to be fine.
