Thai Iced Tea

    As the heat of summer rolls on, I was delighted to stumble across this recipe on Elanas Pantry and then learn that, in fact, Rooibos is allowed on the diet (thanks, shayfo!). 🙂 Of course modifications were made…. for the original recipe.

    I steeped mine in a glass measuring cup, then poured it over ice in a large mason jar.

    2T loose rooibos or 1 teabag
    2c boiling water
    1/4t vanilla extract (is almond allowed, if we can find an alcohol-free version?)
    1/4 to 1/2 packet stevia (I’m not a fan of this stuff, but a little sweetener is better than none in iced tea!)
    2 handfuls ice cubes
    1/2c coconut milk

    Pour boiling water over tea.
    Add vanilla extract and stevia.
    Steep for 15 minutes.
    Strain tea over ice cubes.
    Pour milk over, gently stir and enjoy!

    **While this is really refreshing in the summer, remember that dried tea leaves can potentially contain mold, so try to limit yourself to one cup per day!
