    Thai Curry Turkey Soup

    2 tablespoon virgin coconut oil
    1 turkey breast fillet, seared and shredded
    1 red onion, cut into 1/2 inch chunks
    1 garlic clove, minced
    1 tablespoon red Thai curry paste
    1/2 cup pure coconut milk
    2 cups sugar-free organic chicken broth
    1 teaspoon turmeric powder
    1 tablespoon chopped fresh thyme
    1 small ginger root, washed, peeled, and julienned
    1 handful of fresh haricots verts (french green beans)
    1 tablespoon lime/lemon juice (your preference)
    1/4 cup chopped fresh parsley
    Sea salt if desired

    Heat 1 tablespoon of the coconut oil in a large pot over medium high heat.
    Season turkey fillet with sea salt and black pepper, and sear for about 3-5 minutes on each side, until golden brown and fully cooked.
    Remove from heat and set aside to cool.
    Heat the rest of the coconut oil in the pot.
    Add onion and sautee, stirring often, until deep golden brown, about 5 minutes.
    Stir in garlic and curry paste and cook for 1 minute more.
    Whisk in coconut milk and chicken broth.
    Shred turkey fillet.
    Add thyme, turmeric, turkey and ginger to broth and bring to a rolling boil.
    Reduce heat to medium low, cover and simmer 7 to 8 minutes, or until ginger is almost tender.
    Uncover, stir in green beans and lime juice and cook 6 to 8 minutes, or until green beans are almost tender and broth is slightly thickened and hot throughout.
    If the broth is not salty enough, add sea salt to taste.
    Remove from heat, stir in parsley, and serve.

    Yields 1-2 servings.
