    Six weeks in and with no bread-like food I was going a little crazy.

    Quinoa Flatbread

    Serves: 2

    Ingredients
    1/2 cup quinoa flour
    2-4 tbsp flaxseed meal
    1/4 tsp sea salt
    1/2 cup filtered water

    Instructions
    1. Preheat the oven to 200c/400F and line baking tray with baking paper
    2. Stir all of the ingredients together in a bowl to form batter. Pour the batter onto the prepared tray, forming two disks. Use a spatula to spread and even out the batter (it should be approx. 5mm/1.4 inch thick).
    3. Bake for 20 minutes, or until golden brown and beginning to crack.
    4. Remove from the oven and cut into quarters. Allow to cool.

    I just made these tonight plus Baba Ganoush but I’m already thinking of variations. Adding cracked pepper or sesame seeds, maybe adding herbs to the mix or minced garlic. Sprinkling sea salt flakes on top before baking…

    I’m so having soft boiled eggs and soldiers tomorrow for breakfast!

    Thanks, teadrinker. This was easy and came out great. I only had to bake mine for 15 minutes, but perhaps I made mine thinner than your.

    quinoa is not on the forum’s strict diet (neither are flaxseeds, actually), so if you’re following that list, you are correct. there are quite a few people (especially in the recipe section, it seems) who are following the website’s diet or the body ecology diet or a plan from their naturopath, so their diet is more inclusive.
