    Oat Bran/ Almond flour Scones (can be made sweet or savoury)

    I guess these are ok for stage two and beyond, in moderation of course; be careful, they are addictive! The sweet version of these are really good with cashew butter spread on them.

    Makes 12 large scones or more small ones

    Dry Ingredients
    1½ cups oat bran
    1½ cups almond flour
    ¼ cup ground flax
    2 t baking powder
    1 t salt
    2 t cinnamon (sweet version only)

    Wet Ingredients
    3 eggs
    ¾ cup water
    6 drops stevia (2 drops for savoury version)
    2 t vanilla extract (sweet version only)
    ¼ cup melted coconut oil (or butter, or ghee)
    Optional additions:
    ¼ cup nuts and or sugar free chocolate chips (for sweet version)
    1/3 cup grated cheese & 3 Tbsp dried herbs for savoury version (I like rosemary, oregano, parsley)

    Preheat oven to 425 F.
    Mix dry ingredients together.
    Mix wet ingredients in a separate bowl.
    Add wets to dries and then add additions if using.
    Scoop onto greased and floured (I use coconut flour) cookie sheet and pat down a little with a fork
    Bake for 15 minutes or until the middles are pretty well set.
