I made this recipe last week and have enjoyed it in a few different meals.
Cucumber and Celery Salad: 1 Cucumber sliced if you want more of a dressing for salads. Use 2 cucumbers if you will only be eating as a stand alone. 2 stalks of celery sliced 1 radish diced 2 cloves of garlic minced 3/4 cup of Kefir 3/4 plain greek yogurt 2 tablespoons EVOO 1/4 tsp sea salt 3/4 to 1 tsp dry dill (fresh would be great too but I didn’t have it at the time). (also next time I want to try this adding fresh basil)
Add all ingredients into a bowl with a lid. Chill for at least 2 hours to let flavors marry.
We enjoyed this alone. We ate it as a side with Lebanese Chicken Taouk (another great recipe for those on Stage 2… let me know if anyone is interested). Once the salad got low of veggies we poured the remaining seasoned kefir and yogurt over a salad and enjoyed that way.
We will be making this again and again. The garlic is STRONG in this but we loved it that way & it is great for the stage 2 diet.
It is a salad, a side and and salad dressing all in one! 😀
