    I can’t remember where I found this recipe but thought that I’d share it.

    Candida Diet Friendly Mayonnaise:

    1/2 cup unsweetened soy or almond milk
    1 cup plus 2 Tbsp sunflower or other light-tasting oil, preferably organic
    1/4 tsp Braggs apple cider vinegar
    2-4 drops stevia liquid (to your taste)
    1/2 tsp fine sea salt
    1-1/2 tsp fresh lemon juice
    1 tsp finely grated lemon zest
    1/4 tsp dry mustard powder

    Blend all ingredients in a high speed blender until thick, scraping down sides as necessary.  Transfer to a jar and refrigerate before using.  (If using a conventional blender, blend all ingredients except oil.  Then, with motor running, slowly pour the oil into the blender and allow the mixture to emulsify.  Transfer to a jar and refrigerate before using).  Makes about 2 cups.

    I’ll be sticking with a slightly different recipe… as eggs are allowed on the candida diet but almond/ soy milk isn’t… and I’m not sure mustard powder is.

    It’s very simple… put 2 organic egg yolks, 1 dessert spoon apple cider vinegar and a little salt in a glass bowl and whisk. Then very gradually add 8oz oil (oil, sunflower, any oil will do and you can mix oils… but it can be very strong if you use all extra virgin olive oil). Start 1 drop at a time, whisking like mad and as it emulsifies you can add it faster gradually. Season to taste at the end.

    Add roasted or raw garlic at the eggs stage if you fancu aoili.


    (By the way, Able warned about not using raw eggs but I checked with him and as it’s mixed with apple cider vinegar it’s fine)

    According to The Candida Cure by Ann Boroch, Almond milk is ok as long as it is unsweetened. My mother and I both use it and the diet is working well for us both.

    Unsweetened almond milk is okay to use on the diet and I don’t think that a small amount of mustard powder should bother anyone.

    I like that this recipe doesn’t have eggs.
    I try to rotate the foods that I eat and I’m already eating a lot of eggs in my diet.
    -The idea of using a raw egg grosses me out :/
