I’ve recently been eating a lot of broccoli and cauliflower. I eat both the blossoms and the stems, sometimes raw sometimes cooked. I was wondering about the stems, since they seem a bit more fibrous. Is this okay to eat? I’m worried about them having too much starch or sugar because they sort of have the texture of potatoes. I hope they’re fine, since they’re one of the most filling vegetables and I eat them a lot.
