    I think I’m using cabbage as my pasta that I’m missing. Tonight I just chopped and dumped but I’ll try to explain. Family liked it too.

    1 TBS of olive oil
    1/2 onion chopped
    2 stalks celery chopped
    2-3 cups chopped green cabbage
    2-3 cloves of garlic
    2 TBS of chopped green olives (be sure they are from approved list)

    Heat olive oli in pan and add onions and celery cook on med heat until translucent. Add cabbage and cook down. When cabbage is still crunchy but mostly wilted I added garlic and 2 scoops of green olives. I cooked this mixture with pan covered for another 2-3 minutes on medidium heat stirring occasionally.

    I added sea salt and pepper to taste.

    Everyone just chowed down. I’m full. No need for meat tonight 🙂

    They had turkey burgers with it and thought they went super together.

    Just wanted to say that I like seeing more meat-free recipe options. I was running into some trouble cooking new things and couldn’t find many ideas I liked because most included meat. Thanks for your fresh ideas! I am going to try a few this week! 🙂
