I found this delicious recipe on-line and tried it out. It’s amazing.
1 1/2 ripe avocado
1 c. (organic) yogurt (original recipe called for soy yogurt)
1/2 c. almond milk
2 tbsp lemon juice
3 tbsp Stevia (or to taste)
1 tbsp lemon zest
1 tsp. vanilla extract
– set aside the lemon zest
– place all ingredients in a food processor or blender
– blend until smooth
– transfer to a bowl or ice-cream maker
– stir in lemon zest
– If not using an ice-cream maker, freeze in an airtight container for at least 2 hours. When ready to use, let it thaw slightly, giving it another stir
** this recipe makes several generous portions

I made this last night and haven’t tried it frozen yet, but the mixture was soo soso delicious. I was out of nut/seed milk so I blended up some pumpkin seeds (with water to make milk) and didn’t take out any of the blended seeds, which added an amazing “nuttiness” (seediness?) to the yogurt blend. I highly recommend it!
