    Stage 1

    Avocado and Tomato Salad:

    6 oz grape tomatoes (about 1 cup), halved
    2 Scallions, sliced thin
    1 T fresh lime juice plus 1 t grated zest
    1 small garlic clove, minced
    1 T olive oil
    1 ripe avocado, halved, pitted, and cut into 1/2 inch pieces
    1 jalapeno chile, stemmed, seeded and sliced thin
    2 T minced cilantro

    Toss the tomatoes and 1/4 t salt in a colander set in a bowl. Let drain for 15 mins.

    Combine scallions, lime juice, lime zest, garlic, 1/4 t salt and 1/4 t pepper in a medium bowl. Let sit for 5 minutes, then slowly whisk in oil.

    Add the drained tomatoes, avocado, jalapeno, and cilantro in a bowl with the dressing and toss to combine. Season with salt and pepper to taste and serve.

    Great as a side dish or by itself.
