1 tea spoon of unsweetened alcohol-free vanilla extract
1/2 cup of Xylitol
In a bowl, first mix the almond meal/flour with the shredded coconut and the baking powder.
In another bowl whisk the Xylitol, and the eggs for about 4 minutes. Now add the vanilla extract and mix.
Whisk the two bowls together. Make a batch of 2 inch balls(That’s about 25-30 balls) and put each ball in paper cups, cupcake cakes or a cupcake dish. Bake at 350 degrees Fahrenheit for 15 minutes. Let them cool for about 25 minutes. Enjoy!
