Hi, I think it all depends on the type of salt that is in your brine. The protocol on this forum recommends using himalayan sea salt. The salt in tinned food is probably not suitable. Your supermarket might have sardines available that have been preserved in olive oil or spring water. I notice you live in England, the princes tinned fish brand definitely do sardines in olive oil.
