Stevia isn’t ‘real’ sugar, so you’ll have to use regular sugar for the kefir grains to ferment. Don’t worry about receiving too much sugar; as the kefir ferments, the bacteria absorb the sugar. If you ferment the kefir correctly, at the correct temperature and for the correct length of time, there will be little to no sugar remaining in the end product. In other words, if the kefir is ‘under-fermented’ sugar will remain in the end product.
