I also let my kefir brew for 24 hours, and then strain it, and leave the kefir milk for 12 hours before drinking it; however, I leave it to ripen in the fridge, as I don’t like warm milk.

Does anyone know if it is OK to let it ripen in the fridge? And would 12 be too short a time?
