My mom’s recipe is (these are base measures and you make it out of however many egg yolks you want):
1 egg yolk
100ml of oil
salt, lemon juice, mustard (only with ACV for this diet or can be left out)
You put the egg yolks in the mixer, start mixing and then add drop by drop of oil without turning it off. Watch out, if you loose patience, it can destroy the mayo (I’ve done it!). When it starts thickening, you can add few drops at a time, but be careful not to add to much as the yolks and oil will separate. At the end you mix in salt and lemon juice to the taste and little bit of mustard if using.
