What starter is it? Is it one they sell, or another brand? A friend tried to give me some whey starter she uses for lactofermentation, but since I avoid dairy entirely, I declined. I hear it makes the process a lot faster, though. I’ve used a small amount of miso in batches of kraut before, when I’ve needed it fermented by a deadline, and that seems to kick-start things as well.
