I also add bobs red mill unsweetend dry coconut to the top…to give it a little extra something!
I actually find that using the toaster oven to warm It up dries it out also, so I put it in the microwave for about 30 seconds tastes just like it came out of the oven, nice and moist. I make the coconut pumpkin bread, which is different then the regular recipe and I don’t use egg.
