UPDATE: I baked some zucchini and coconut into the bread last night, with cinnamon, nutmeg, allspice, and a little Stevia (which is largely unnecessary). The bread itself is really tasty! It’s good by itself, but I also brushed it with a little ACV and put some cinnamon on top – OMG just great!
1/2 to 3/4 c freshly grated zucchini
1/4 c grated coconut
6-7 organic eggs (depending on how much moisture you get from the zucchini)
1/4 c olive oil
1/4 c homemade ghee
1/8 c “Stevia water” (Stevia powder dissolved in water)
3/4 tsp sea salt
1 to 1-1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1 to 1-1/4 c buckwheat flour
Really you just have to check the mixture for consistency. If it’s too runny, add flour, if too dry, add liquid in the form of eggs or olive oil. The ghee adds a lot of flavor too, and is easy to make at home (as I discovered yesterday!).
