After just seven hours, it ‘should’ be fine but it can also depend on the temperature of the room. As far as the ‘spots’ are concerned, I don’t know what those are since I’ve never seen it happen. Like M said, you should put it in the refrigerator as soon as it cools after baking and leave it there for storage.
