It’s been about 7 hours now and there was some condensation on the plastic and there’s a couple patches on the top of the bread that are lighter than the rest. Is this normal? I don’t wanna eat it and get sick (I had no reaction fresh out of the oven).

After just seven hours, it ‘should’ be fine but it can also depend on the temperature of the room. As far as the ‘spots’ are concerned, I don’t know what those are since I’ve never seen it happen. Like M said, you should put it in the refrigerator as soon as it cools after baking and leave it there for storage.
