I’m wondering if buckwheat can be cooked one day and eaten the next day? Does it have to be re-heated or can it be eaten cold, for example in a salad.
Of course it can be eaten days later.
Refrigerating the buckwheat will actually lead to increased resistant starch (non-digested food for beneficial bacteria).
I use it cold to roll sushi (replacing white rice with cream of buckwheat).
