Some are at the point where they can introduce black/red rice into their diets. But until then, here is something I like:
3-4 cups of chopped cabbage 1-2 organic eggs 2 cups veggies of your choice. I used broccoli, green peppers and onions. 2 T olive oil Sea salt and pepper Any of your favorite seasonings
Cook/steam vegetables and set them aside. Chop the cabbage and cook in a skillet on medium high heat with the 2 T of olive oil. Cook until the cabbage is soft and slightly brown (or to taste I suppose). Add the cooked vegetables and the two eggs all together and cook about another minute until the eggs are fully cooked, stirring occasionally. Season to your liking!
Did this other day and made me smile because it looked so much like fried rice. 🙂
