maybe this might work, not sure, tried to adapt this from a recipe I found. it called for red peppers to look like ketchup, but I know green peppers are the best, so green ketchup, plus I did 1/2 of another veggie to not make so spicy plus it called 4 quite a bit of sugar that I left out
3 cups pureed green bell peppers (about 3 large bell peppers + food processor or blender) (I did 1/2 peppers and 1/2 celery)
3/4 cup apple cider vinegar (did 1/2 acv and lemon juice)
all to taste pepper cinnamon garlic powder onion powder stevia papikra little mustard
In a small pot, bring all the ingredients to a rolling simmer over medium heat. Cover with a lid and cook until reduced by 1/3, about 15 minutes.
