    1 organic egg
    Lemon or lime
    1 tbsp water
    1/2 tbsp butter or olive oil
    stevia (to taste – best to add to the water and lime juice before you add to the egg mixture)

    Preheat grill. Separate egg and beat white until it forms stiff peaks. Beat egg yolk with stevia, lemon or lime zest and juice and water. Carefully fold egg white into egg yolk mix with metal spoon.

    Heat butter in a omelette pan and add egg mixture, cooking on a medium heat until it is brown on the underside. Put under grill to cook the top.
