My mom has been making a ton of granola lately so I decided to see if I could make some to fit my diet. It turned out super good! (:

    2 cups oat bran

1/4 cup melted coconut oil (or enough to evenly coat the oats)

    2-3 tbsp stevia

    1-2 teaspoons cinnamon

a few dashes of sea salt

    Optional:
    Raw blanched almonds
    Unsweetened coconut flakes

Preheat oven to 250 degrees. Mix everything together in a bowl, spread out evenly on a baking sheet, and cook for 25-30 mins (stirring about every 10) or until golden brown.

Bump. Alex’s recipe has nice variations to this:

Granola for Everyone! (candida-friendly, gluten free, soy free, sugar free, nut free, corn free)

    2 cups oat bran
    3/4 cup raw buckwheat groats
    alcohol-free vanilla
    1/4 tsp sea salt
    cinnamon
    nutmeg
    ginger
    1/4 cup coconut oil
    Preheat oven to 250 degrees.

Melt the coconut oil by boiling a small amount of water in a pot and putting the oil in a small glass dish in the water.

Mix together all of the ingredients in a large bowl.

Bake on a baking sheet at 250 degrees for 30 minutes, stirring every ten minutes. Enjoy!

Delicious! Thank you for these recipes. I just thought I’d let people know if you want chunky granola, mix in one or two eggwhites before baking than let the granola cool completely before removing from the pan. I love chunks in mine!
