Is it really so bad to start off with commercially sold Kefir and yogurt, provided I get the best possible brands? I’ve read about making homemade kefir, and I’m pretty skeptical of my ability to pull it off. Plus I have a fridge full of Stonyfield Organic Oikos (bought before I found the stricter diet) that I’m afraid will go bad if I wait too long.
Just be sure to test it carefully. This means to eat only a few bites and wait for about two days before eating more. If at any time you receive Candida symptoms after having it, then that probably means the fermentation process was too short and the yogurt or kefir contains too much lactose.
