3 eggs 1 tablespoon coconut oil small piece of ginger root peeled (about size of a finger) 1/2 cup pecan nuts 1 cup almond flour 1 tablespoon chocolate/carob powder 1 tablespoon cinnamon 1/2 tsp all spice 1 tsp baking powder 2 tablespoons xyitol (or more depending on how sweet you want it to be)
Heat oven to 375. Grease a 7in round cake tin with coconut oil. Blend together eggs, coconut oil, ginger and nuts together in a food processor or with a hand blender. Mix in all other ingredients.
Bake for about 25 mins – use a knife to test centre is cooked.
