    I recently came across a very simple Scottish Oat Cake recipe. It called for finely ground oatmeal which I assume is similar to, or the same thing as, oat bran. The only thing I changed in the recipe is the oil instead of butter.

    t=teaspoon, T=Tablespoon

    1c oat bran (not the flour)
    1/4t sea salt
    pinch of baking soda
    1T coconut or olive oil
    1/4-1/3c hot water

    Preheat a LIGHTLY greased large skillet or griddle to medium heat.
    In a medium bowl, mix together dry ingredients.
    Add oil. Add water, a little at a time to make a dough.
    Roll out dough onto surface dusted with oat bran.
    Cut cakes into whatever shape you like. (I used the mouth of a small glass jar to get circles.)
    Cook for 4-5 minutes, then flip and cook for 1 more minute.
    Cool on a wire rack before enjoying.
