This might sound like a weird question but are we allowed to roast our vegetables (i.e. onions, courgettes/zucchinis, swedes/rutabaga)? I just read somewhere that this releases more natural sugars but is that getting a bit ridiculous?
I roast them sometimes, Katy. I’m sure it’s *best* to lightly steam them (some are absorbed better lightly steamed than raw) or raw, but a girl’s gotta have a little flexibility with all this veggie consumption! 🙂 I grill mine sometimes, too. Shhh. Don’t tell 😉
