    Preheat the oven to 500.

    1 lb Asparagus
    Extra virgin olive oil
    salt and black pepper to taste
    2 T fresh parsley or chives
    Lemon wedges

    Prepare asparagus and arrange the spears in a lingle layer in a shallow baking dish and drizzle with oil. Roast 8 to 10 minutes. Sprinkle with salt and pepper and more oil if desired, and herbs. Serve warm or at room temperature with lemon wedges.

    This is one of my staple dishes! So good with fish. Also great with softly poached eggs. Yum!
