I adapted this recipe from http://meghantelpner.com/blog/meal-prep-muffin-celebrations-recipe/
I used what flours I currently have – her original recipe calls for brown rice, millet, and almond flours.
Her recipe calls for applesauce, which can be an egg substitute, so I just used a chia egg as the substitute for applesauce!
I use a lower-case t for “teaspoon” and an upper-case T for “tablespoon”
2c oat bran flour
1c buckwheat flour
1 1/2t baking soda
1t cream of tartar
1/4t sea salt
3 packets Stevia (approx 1T) or 1 dropperful liquid Stevia
1 egg or egg substitute (I did a flax egg and it worked great)
1 chia egg (1T chia, 3T warm water, let sit for 5-10 min)
1T apple cider vinegar
1t vanilla extract
1/4c coconut oil
2c rhubarb, cut into 1/2-inch pieces
Preheat oven to 350.
Mix dry ingredients into wet ingredients, adding more water if necessary.
Add in rhubarb.
Drizzle each muffin tin with melted coconut oil (muffin liners were not very helpful)
Scoop batter into tins.
Bake for +/-30 min.
