Looking forward to reading everyone elses. So I made this for dinner the other night but it works much better as a filling breakfast. Cook some quinoa until fluffy and set aside. Scramble eggs (I did 2) and steam courgettes/zucchinis and asparagus. Mix together and add some salt, pepper and a squeeze of lemon.
