However I think most people just use pumpkin puree, and I don’t know if that has any if at all pumpkin skin, it seems to be mostly pumpkin flesh.
Since pumpkin is a low starch vegetable that doesn’t raise blood sugar, I’m tentatively adding it to my diet as it’s in season and I adore pumpkin. I’ll have to look into buying whole pumpkins I can bake to try eating the skin!
