    1/4 cup oat bran
    1 tsp baking powder
    2 tsp cinnamon
    1 tsp coconut/olive oil
    1 egg
    Add stevia if you like

    Mix it all in a bowl or cup. Pop that in the microwave for 50-60 seconds and walla!
    You can switch out the oat bran to flaxseed meal or something different. Post your results 🙂

    Mine was too dry @40 seconds on high. Ill try again on medium with a little water. Very filling, thank you!

    I used a little less oat bran and 1/2 TSP of baking powder and added 1TBS of water. I also stirred it after 30 seconds. Then microwaved for a mother 30 seconds. Turned out great!

    I tried to make the muffin again (in the oven)
    This time i put just a pinch of baking soda and it turned out awesome!!!!
    next time ill try a savory version with olives and dried origano

    I know I already posted about this, but I just got back from a trip to visit my sister out of state, and these muffins saved me! I just brought the ingredients and cooked one up really quick whenever there was nothing else to eat (which happened a LOT). This is by far my favorite recipe I’ve found on this site so far!

    Thinking it might be nice with a dash of ginger powder or a splash of alcohol free vanilla (or a scraped vanilla bean) next time!

    Don’t you need water with it? Or is it just an egg and some oil?

    Love this. I make mine with carob powder instead of cinnamon and with xylitol. Very similar to a rich chocolate cake! Yes! Thanks.
